And what better way to be transported there than through the flavours of Tuscany itself?

Our Pici with Wild Boar Ragù is a true Tuscan classic. Made from plump strands of durum wheat pici, thicker than spaghetti for that satisfying bite, it delivers a rustic, toothsome texture that perfectly cradles the sauce. The wild boar is marinated for 24 hours in red wine, aromatic vegetables, and herbs to tenderise the meat and infuse it with deep, earthy flavours. It is then slow-cooked for 4 hours until it becomes meltingly tender, creating a ragù that is rich, robust, and layered with complexity – savoury and subtly sweet from the wine and slow-cooked vegetables. The result is a comforting, hearty dish that captures the very essence of Tuscan cooking. One forkful will transport you straight to a bustling piazza in Florence, where the story begins.

About Pici with Wild Boar Ragu

Fresh: Cook for 4-5 minutes in salted boiling water
Frozen: Cook for 5-6 minutes in salted boiling water

  1. Bring 2 litres of well-salted water to a boil. Add the Pici and cook for 4-5 minutes.
  2. In a frying pan, gently warm the Wild Boar Ragù over low heat, add the Sage Butter and stir in until these are combined. The butter helps to cut through the acidity of the tomato base of the ragú. Once the pasta is cooked, transfer it to the frying pan along with some starchy pasta water. This will create a silky sauce that coats the pasta beautifully.
  3. Cook for one extra minute until the ragù and Pici are well-combined.
  4. Plate and serve with a generous sprinkle of Parmigiano Reggiano.
