Our artisan Tortelloni are hand-folded to ensure that each and every one is filled to perfection. They are made from 00 and durum wheat flour with a high free-range egg content (30%) – this is a sign of superior quality. This filling is made following a recipe claimed by both the Southern regions of Campania and Sicily. Slow-roasted aubergine is mixed with garlic, tomato sauce, and fresh Italian mozzarella to make a delicious filling, which pairs well with our Tomato Sauce.

About Aubergine Parmigiana Tortelloni

Cook in boiling water for just a few minutes.
Cooking Instructions
Bring 2 litres of water and a pinch of salt to the boil in a large pot.
Simmer the Aubergine Parmigiana Tortelloni and:
- Fresh: Cook for 4-5 minutes in boiling water.
- Frozen: Cook for 5-6 minutes in boiling water.
Drain and serve with Parmigiano Reggiano and olive oil, or with your favourite sauce.
