Pici is a traditional pasta from Tuscany, often described as a rustic cousin of spaghetti. Its thick, irregular strands are made from simple durum wheat dough, giving it a wonderfully chewy texture that clings beautifully to rich sauces. Hearty and satisfying, pici embodies the warmth of Tuscan cooking: uncomplicated ingredients, crafted with care, that turn every mouthful into a taste of the Italian countryside.

Cook in boiling water for just a few minutes.
Bring 2 litres of water and a pinch of salt to a boil.
Simmer the Pici and:
Fresh: Cook for 4-5 minutes in boiling water.
Frozen: Cook for 5-6 minutes in boiling water.
Drain and serve with Parmigiano Reggiano and olive oil, or with your favourite sauce.
